Hi, great tutorial thank you! There is a "Silhouette" option in your shading pie menu. I'm guessing that is something custom you have added? Because i can't find it in 2.80. It's quite useful and there should be an easy way to access it in Blender.
*@mikael* It's a custom script that switches the shading to single color, falt shaded and black. I agree, there should be a faster option to get there and it's being discussed at Blender :)
I'll start all my sculpts with an helicopter or a tree. The Kaspar method.
